Another one of my favorites as a child, and even today is Danish pancakes. They are similar to the Dutch and the French versions but not as thick as the Dutch and more flavor than the French. (Just don’t tell them I said so!) The ingredients and technique can vary from family to family so this one is mostly from my family but with a few subtle differences. We generally serve it with jam inside but fresh fruit or chocolate is great too. You obviously can make up your own fillings as well. In this one I think it is important to watch the video to see the technique as well as the timing as it can be a bit tricky if you have never made them before. Hope you enjoy.

Yellow Split Pea Soup

Growing up I loved walking into the kitchen and the smell when my Mor (Mom) was making pea soup. Who doesn’t like their mother’s cooking? They say music and smell are the two main memory triggers. I think they are probably right. This particular recipe has a few variants that others may not have. One is that she didn’t always have the time to add the bone and the other is she added celery root. She also added parsley and crisp onions as a garnish. Subtle but it is there. It is basic but really hits home with all the flavor profiles.

Mango Salsa

Who doesn’t love Salsa! Like Jerry Seinfeld use to say, “We love to say the word Salsa!”. This is a simple but very tasty variation from the original. You can use fresh mangoes or, if you can’t get good ones or they are too expensive, use frozen. In some ways they are actually better. More evenly ripened and you don’t have get all messy cutting them up. Either way it is delish! I will sometimes put it on fish dishes but I also love it on tacos like tacos al pastor or pulled pork. Or if you prefer they make great snacks with just tortilla chips. Hope this adds to your list of condiments.
