Kimbo’s Peppered Smoked Mackerel Melt

As a Dane we love Mackerel. Smoked is even better. When you combine this with melted cheese, well it is a beautiful marriage. This fish is oily and full of flavour. I get my smoked mackerel from my local fishmonger but if you can’t get it there then canned in oil or water will suffice. I add liquid smoke to the mayo to compensate for the real smoked product. Remember that you only need a few drops. The ingredients and prep are super easy. Much like a tuna melt but way richer. As always, I hope you enjoy this Danish variation on a Tuna Melt as much as I do.

Ingredients for Kimbo’s Peppered Smoked Mackerel Melt.

Ingredients

  • 2 Slices of slightly toasted bread. My preference is Brioche.
  • 2 small fillets of peppered smoked mackerel. If you can’t get it from your fishmonger then a tin in oil or water is fine. Just add a few drops of liquid smoke into the mayo. (Great cheat)
  • 1 ripe avocado mushed up.
  • 2 stalks celery medium chopped.
  • 6 tbsp (90 gr.) mayo.
  • 2 tbsp (30 gr.) each aged Provolone, Gruyere, White aged Cheddar and Mozzarella grated. You can make up your own miz as well of course.
  • 2 tbsp grated parmesan.
  • 2 scallions , green onion medium chopped.
  • 1 tsp (5 gr.) smoked paprika.
  • Salt and pepper to taste.
  • 2 thin slices of tomato.
  • 1 lemon
