Simple Braised Lentils with Vegetables

This dish is so hearty, healthy and great side to so many other dishes. Packed with nutrients this is great all on its own as well. Personally I prefer the green lentils for their firmness but others will do as well. I have made this with chicken stock and bacon but for those of you that prefer vegetarian, simply hold the bacon and use vegetable stock instead. For my purposes I have made this as bed to support my reverse sear Wild Boar chops. Along with my Apple Raisin compote makes for a delicious hearty meal. Super easy to make and impress your guests. Hope you enjoy.
