Ahi Tuna Appetizer

If you are pressed for time but want something that is easy, elegant and fast… This is it! You can swap the Ahi Tuna out for Albacore Tuna as well but it won’t have the same texture or flavour. Remember to us Sushi grade Tuna. This means it has been frozen to at least -20C. (-4F.) for at least 7 days. This insures that if there are any parasites in the meat that it will be rendered inert. When cutting the slices it is much easier if the Tuna is still slightly frozen.

I have not included the amounts in this recipe as it depends on how much you are making. If you look at my video you will be able to see for yourself what to do.

Ahi Tuna Carpaccio Ingredients

  • Ahi Tuna (slightly frozen)
  • Red Onion (fine diced)
  • Mayo
  • Cracker of choice
  • Wasabi paste. (you can use power if needed.)
  • Fresh cracked pepper
  • Parsley

Ahi Tuna Carpaccio Cooking instructions

  • Mix wasabi paste or powder with mayonnaise. Set aside in fridge.
  • Dice red onion into Brunoise. (fine diced)
  • Cut Tuna into thin slices.
  • Place Tuna on top of cracker of your choice.
  • PLace diced onion on top of Tuna
  • Take a small plastic sandwich bag and cut small hole in corner. Spoon wasabi mayo into bag. Apply mayo on top of onions .
  • Apply parsley as a finish!
