Danish Radish Greens Salad

I just harvested my first round of French Breakfast radishes from my back deck! I love these radishes because they have a peppery taste to them. What many people don’t know is that the greens or leaves on top are also so delish. My Farmor (grandmother) in Denmark used the greens to make a wonderful summer salad. Here is the recipe as she used to make it but have added spinach to tone down the peppery flavour to my own taste. I have also included in the end another add on version with proteins to make it as a main as well. As always i hope you enjoy.

Ingredients for Danish Radish Greens Salad.

Ingredients

  • two handfuls of radish greens and equal amount spinach
  • 60ml (2 oz) avocado oil, plain full fat yogurt, sour cream and white vinegar.
  • 30gr (1 oz ) brown sugar
  • salt and pepper to taste
  • 15gr (half oz.) Dijon mustard
  • 1/8 lemon slice
  • 60gr (2 oz) shallots
  • 8 medium radishes (thinly sliced)
  • 8 cherry tomatoes (halved)
  • basil chiffonade
  • Extra proteins for a main .
  • 1 cooked chicken thigh
  • corn
  • 1 hard boiled egg
  • more radish
  • more basil


Directions for Danish Radish Greens Salad.

Directions

  1. Wash and dry the radish greens and spinach.
  2. Thin cut radishes
  3. Add the first 6 ingredients together and whisk to make dressing
  4. Add lemon at the last minute while dressing the salad
  5. Toss both greens together.
  6. Add dressing and toss.
  7. Add shallots and radishes.
  8. Toss again.
  9. Add cherry tomatoes on top with basil chiffonade.

If you want to make this a main it is super easy. I added smoked chicken and smoked corn kernels along with a hard boiled egg. If you don’t have these on hand you can add extras of your choice. Some items I like are various cheeses, cold cuts like ham or salamis, etc. The choices are endless. Either way it is a great way to make use of this much overlooked green and i hope you enjoy!
