Danish Pancakes ( Dansk Pandekager)

Another one of my favorites as a child, and even today is Danish pancakes. They are similar to the Dutch and the French versions but not as thick as the Dutch and more flavor than the French. (Just don’t tell them I said so!) The ingredients and technique can vary from family to family so this one is mostly from my family but with a few subtle differences. We generally serve it with jam inside but fresh fruit or chocolate is great too. You obviously can make up your own fillings as well. In this one I think it is important to watch the video to see the technique as well as the timing as it can be a bit tricky if you have never made them before. Hope you enjoy.

Ingredients

  • 200 gr. flour
  • 2 tsp sugar
  • 1/4 tsp salt
  • 1 tsp cardamom
  • 350 ml. 2% milk
  • 120 ml. beer (lager)
  • 3 large eggs
  • 1 tbsp butter


Directions for Danish Pancakes ( Dansk Pandekager)

Directions

  1. Make sure all ingredients are at room temp. and the butter melted but not hot.
  2. Warm oven and sift Flour.
  3. Make a well in the flour and add mixed eggs into the middle.
  4. Whisk gently until most is incorporated.
  5. Slowly add milk until all the lumps are gone.
  6. Add beer and whisk
  7. Add all the other ingredients with the butter last.
  8. mix well and let stand for 30 minutes.
  9. Warm a non stick pan on 60% heat.
  10. slowly add one ladle full of batter to the pan in a half moon shape and swirl around until it covers the entire surface. ( if you get a small spot that isn’t covered, add a bit to the patch)
  11. Let cook for several minutes until it releases from the surface of the pan.
  12. Carefully lift edge to see it is browning.
  13. Once you see brown spots on the underside, tilt pan and using your fingers grab the edge and slide over.( Please see video )
  14. Let cook for several minutes and you are done!
  15. Place in warm oven and start over.
  16. When all are cooked, place pancake on a flat surface and spread your filling in side to two edges.
  17. Roll, and serve.
