Kimbos Spaghetti Squash

Here is another simple but very tasty side dish for the holidays. Great holiday dish! Just remember not to over cook so you can reheat at the last minute before you put your Sesame seeds on as garnish.

Makes: 8 Cooking time: 40 minutes. Difficulty: Easy

Ingredients for Kimbos Spaghetti Squash

  • 1 large or two small Spaghetti Squash
  • good olive oil
  • Avocado oil
  • 20 cherry tomatoes or grape
  • 20 basil leaves cut to chiffonade.
  • 60 ml ( 2oz.) Good Balsamic reduction.
  • 30 gr. (1 oz.) well toasted sesame seeds.
  • salt and pepper to taste.

How to make Kimbos Spaghetti Squash

  • Heat oven to 450 F. (230 C.)
  • Split and core out squash (see video)
  • Rub with Avocado Olive and lightly salt.
  • Bake for 40 minutes depending on oven. Check doness after 20 minutes. Should be just fork tender. (don’t over cook )
  • Scrape out inside strands into mixing bowl.
  • Liberally sprinkle Olive oil and mix into strands.
  • Add Basil and tomatoes
  • Let stand up to an hour before serving.
  • Just before serving add balsamic and put in microwave for no more than 30 seconds.
  • Sprinkle with Sesame seeds and serve.
