How to make Danish Aebleskiver

Danish Aebleskiver but easier and faster. (Fluffy pancake balls).

If you are a Dane or know a Dane then you probably have had this dish. And if you haven’t then you definitely need to try! These light, tasty little balls of delightful dough are awesome. You will need a special pan but these are available on line if you can’t find one near you. This particular recipe is a bit different. Many people like to use yeast. I am not one of them. I use baking powder and baking soda. No waiting, go right to the pan after mixing. I also use cardamom and fresh lemon zest. I also do one flip in the pan. (You will see what I mean in the video.) Some like to put apple (ergo “apple slices”) or other stuffing inside which I will show as well. Very quick and easy to make, I hope you enjoy!

Ingredients

  • 2 egg whites (room temp)
  • 2 egg yolks
  • zest from 1 whole lemon
  • 2 cups all purpose flour
  • 2 cups butter milk
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp white sugar
  • 1/2 tsp salt
  • 4 tbsp softened butter
  • 1 tbsp cardamom
  • melted butter for pan. 1/4 cup
  • raspberry or other jams (optional)
  • 2 wooden skewers (or knitting needles.)


Directions for Danish Aebleskiver

Directions

  1. Set oven on warm.
  2. In a clean bowl beat egg whites until they have firm peaks.
  3. Mix flour, baking soda, baking powder, sugar, cardamom, lemon zest and salt in one large bowl.
  4. In a large cup or medium bowl add butter milk, butter and egg yolks together. Whisk until just blended.
  5. Add liquids to dry ingredients. Add half first, whisk. Then add the rest until lumps are gone.
  6. Gently fold egg whites into mixture until incorporated but be careful not over mix as it will take away from the fluffiness.
  7. Preheat pan on medium to 3/4 high heat.
  8. Add a bit of butter to each well in the pan. Wait for it to stop sizzling then…
  9. Using a large spoon or piping bag fill the wells just over half full.
  10. Wait until the edges are set and try to move the balls with your skewer. If it doesn’t stick and can rotate a bit you are almost ready to flip. Check the rims for some brown coloration. (see video)
  11. At this point you can add jam or other flavours to center. (pls.see video)
  12. Using the skewers flip the balls over all the way. Let cook for a few more minutes then flip back to check for doneness.
  13. They should have a light to medium tan color. If it is lighter in places simply flip back down until you get desired color.
  14. Remove to a holding bowl in the oven and repeat until all the batter is used up.
  15. Serve with a dusting of confectioners sugar (icing sugar) and jam or Nutella on the side! Done.
