Green Peppercorn Sauce

Green Peppercorn Sauce is truly a classic sauce. This marries perfectly with many proteins. Chicken, Pork and especially Steak! If you are looking for something to accompany your mail, this will hit the spot.This sounds fancy but is so easy to make and not only fast but also freezes very well. As always, I hope this makes your repertoire that much better.

Ingredients: Green Peppercorn Sauce

Ingredients

  • 50 gr. (1.7 oz.) Green peppercorns in brine. Half are crushed.
  • 75 ml. ( 2.5 oz.) Brandy
  • 75ml. (2.5 oz.) Dry red wine
  • 250 ml. (8.5 oz.) Heavy cream
  • 185ml. (6.5 oz.) Beef broth
  • 90 ml (3 oz.) fine chopped shallots
  • 60 ml. (2 oz.) unsalted butter
  • 60 ml. (2oz.) all purpose flour
  • 4 cloves minced garlic
  • 30 ml. (1 oz.) dijon mustard
  • avocado oil and butter for shallots
  • salt


Directions for Green Peppercorn Sauce

Directions

  1. Heat butter and avocado oil in saucepan on med high.
  2. Once the butter has stopped sizzling add shallots. Saute until just slightly softened.
  3. Add garlic to pan for one minute and set aside.
  4. Clean pan set back on stove, let warm and add flour. Let warm for minute to cook off a bit. Then add butter to make a roux.
  5. Whisk in beef broth slowly at first. Reduce heat to half. Add cream slowly at first and whisk.
  6. Once you have a nice thick consistency add shallots and garlic.
  7. Add Green peppercorns.
  8. Add brandy then dijon. Then red wine.
  9. Let simmer on low heat for 5 to 7 minutes.
  10. Place in small pot and set aside on low until your main protein is ready.

If you can’t get Halibut you can sub in Cod, Salmon or any other fish filet of your choice. Hope you enjoy!
