Kimbo’s Avocado Tuna Melt

Here is another quick and easy comfort food recipe. You can make this ahead of time and melt a la cart for various members of the family to eat at different times. Or you might want it for a late night snack. I use Brioche buns but any bread will do. As always, I hope you enjoy!

Ingredients for Kimbo’s Tuna Melt

Ingredients

  • 2 Brioche buns .
  • 1 can tuna your choice but I prefer in water
  • 1 avocado.
  • 2 stalks celery coarse chopped.
  • 6 tbsp (90 gr.) mayo
  • 6 tbsp (90 gr.) each aged Cheddar and Mozzarella
  • 2 scallions , green onion
  • 1 tsp (5 gr.) smoked paprika
  • Salt and pepper to taste
  • 1 lemon


Directions for Kimbo’s Tuna Melt

Directions

  1. Heat oven to 375 F (190 C)
  2. Slightly toast your bread so it doesn’t get soggy.
  3. In a medium size bowl break up the drained and washed tuna into small pieces.
  4. Place the sliced avocado into the bread.
  5. Into the bowl with the tuna add the scallions and celery.
  6. Then add the smoked paprika and salt and pepper.
  7. Squeeze in a tsp of lemon juice. Mix well.
  8. Add in Mayo and let stand in fridge for 30 minutes.
  9. Pull mix from fridge.
  10. Spread avocado on top of bread then apply the mix on top.
  11. Then add the cheese liberally on top.
  12. Place on preheated grilled rack and tray and place middle rack for 12 minutes or until golden brown.
  13. Squeeze Lemon juice on top and garnish. Done.
