Mango Salsa

Who doesn’t love Salsa! Like Jerry Seinfeld use to say, “We love to say the word Salsa!”. This is a simple but very tasty variation from the original. You can use fresh mangoes or, if you can’t get good ones or they are too expensive, use frozen. In some ways they are actually better. More evenly ripened and you don’t have get all messy cutting them up. Either way it is delish! I will sometimes put it on fish dishes but I also love it on tacos like tacos al pastor or pulled pork. Or if you prefer they make great snacks with just tortilla chips. Hope this adds to your list of condiments.

Ingredients: Mango salsa

Ingredients

  • 2 mangoes
  • Red bell pepper
  • three limes
  • Red Onion
  • Cilantro
  • chipotle Tabasco ( optional )
  • salt


Directions for Mango salsa

Directions

  1. Cut Mangoes into small chunks
  2. Cut Bell pepper into chunks
  3. Rough chop cilantro
  4. Dice red onion
  5. Press roll limes with the base of your hand. (see video)
  6. Cut jalapeno into small dice. Remember to remove seeds and membrane.
  7. Mix all ingredients in bowl.
  8. Cut lime in half and squeeze out juice with a fork over mixture.
  9. add salt to taste. ( for me it is about a teaspoon)
  10. Mix again and let stand for at least 1 hour in fridge. NOTE: the longer it marinates the hotter it gets. I love making this the day before.
