Dungeness Crab Cake Sliders with Bacon

In a previous video I showed you how to pick, prepare, cook a Dungeness crab. Now that you have done all work its time to reap the rewards of your labor! So I thought instead of just crab cakes, how about Sliders? Easy to put together and with the added bacon this is a great recipe for you. Hope you enjoy as always…

Dungeness Crab Cake Sliders with Bacon

Ingredients

  • 300 gr. crab meat
  • 6 brioche slider buns
  • 60 gr. panko
  • 100 gr. mayo
  • 30 gr. melted butter
  • 1 whole egg
  • 8 gr. old bay seasoning (optional)
  • 8 gr. Lea and Perrins
  • 8 gr. Dijon mustard
  • 6 strips double thick cut cooked bacon
  • 1 lemon
  • 3 scallions chopped (green onion)
  • iceberg lettuce
  • salt and pepper
  • Avocado oil
  • Chipotle mayo (or any other flavored mayo of your chioce.)


Dungeness Crab Cake Sliders with Bacon

  1. Warm oven with center rack at 200 F. (93 C.)
  2. Place break up crab meat in a bowl and add panko.
  3. Add scallions, salt, pepper and old bay seasoning.
  4. Mix well.
  5. Add mayo, mustard, lightly whisked egg, Lea and Perrins.
  6. Mix well.
  7. Form 70 gr. cakes by hand. (approx. 6)
  8. Heat pan with small amount of oil. Add cakes and cook until browned. Both sides.
  9. Place in oven to keep warm.
  10. Drain pan. (keep in reserve)
  11. Butter buns and place face down in heated pan.
  12. Once browned, build sliders.
  13. Lettuce optional.
  14. Apply flavored mayo to bottom of bun, then bacon.
  15. Add cake on top, more mayo and then the top.
  16. Serve!
