Fresh Tomato Sauce From Scratch (Vinnie’s)

Who doesn’t love fresh homemade tomato sauce? Obviously there are many variations. This one I took from a good friend of mine and it comes with a new twist. I stick to the basics in the beginning but add a little something in the end. A couple of key take a ways here. First, I take out the skins but not the seeds. You don’t have to peel them but I prefer without for the texture. As to the seeds… many will tell you that the seeds need to go as it makes the sauce bitter. I have not found that. In fact, I think it adds depth. Also, make sure you add the fresh herbs at the end. If you don’t it will get washed out. OK, the secret is tarragon! I had never heard of this before but I have to say I absolutely love it. Easy to make and freezes well. Hope you enjoy. Thank you Vince!

Fresh Tomato Sauce From Scratch

Ingredients

  • 30 vine ripened Roma tomatoes.
  • 2 medium sweet onions
  • 2 whole garlic heads
  • 1 small can of tomato paste
  • 50 gr. Italian seasoning
  • salt and pepper
  • 5 stocks fresh Basil
  • 3 stocks fresh Tarragon
  • Avocado oil


Fresh Tomato Sauce From Scratch method.

  1. Put pot on stove to boil water. Put another pot on the counter with ice cold water.
  2. Rough chop onions.
  3. Fine chop garlic
  4. Cross cut tomatoes on the top. (see video)
  5. Place tomatoes in boiling water for 2 minutes or until the skin starts to peel back.
  6. Place tomatoes in cold water. Peel.
  7. Dice tomatoes and place in pot on medium heat. Cover let simmer for 30 minutes.
  8. Heat pan and saute onions. Once they are fully soft add the Italian seasoning, salt, pepper and garlic.
  9. Stir well for several minutes. Careful not to let garlic burn!
  10. Add mixture to the tomatoes and mix well.
  11. Cover and simmer for another hour.
  12. Rough chop Basil and Tarragon at the last minute and stir into sauce.
  13. Simmer for another 30 minutes.
  14. Serve!
