This is my favourite time of year for tomatoes. Especially cherry tomatoes! The only problem I have is there are soooo many! Aren’t we lucky. So to solve this challenge one of my recipes is this one. I can make a little, or alot. It freezes beautifully as well. Like so many recipes, simple is sometimes the best. This one doesn’t get much more simple than this. Because it is so fast you don’t have to worry about taking out the bitter seeds and I love the skins. It all breaks down so fast and delicious. I usually add a protein like sausages, mushrooms, or another veggie. Or just keep it basic and serve as a side dish. You decide.
Ingredients: 10 Minute Cherry Tomato Sauce. ( 6 people)
Ingredients
- Avocado oil
- Extra Virgin Olive Oil
- 6 large garlic cloves minced
- 5 dozen cherry tomatoes cut in half
- fresh basil chiffonade
- salt and pepper
- italian seasoning
Directions for Cherry Tomato Sauce
Directions
- Cut cherry tomatoes in half. (remove kalix)
- Warm pan with a little Avocado oil in pan. (medium heat)
- Place tomatoes in pan and simmer for 5 minutes.
- Add garlic, Italian seasoning, salt and pepper.
- Let reduce another 5 minutes or until you get the consistency you like.
- At this point you can add your proteins or other veggies to cook for the last five minutes.
- Toss the pasta of your choice in the Olive oil first then pour the sauce over the pasta.
- Top with fresh basil.
