Apple Raisin Compote

Sounds simple, and it is. I made this recipe specifically for another meal with Braised Lentils and Reverse Seared Wild Boar chops. Compote is a rough jam in simplistic terms. Very quick and easy and has so many applications. Great on Chicken, Pork or in this case Wild Boar. These three combos are absolutely amazing.

Ingredients for: Apple Raisin Compote

Ingredients

  • 2 Fuji Apples
  • 180 gr. Sultana raisins
  • 150 gr. brown sugar
  • 70 gr. Calvados
  • 25 gr. butter
  • pinch of cinnamon
  • salt and pepper


Directions for Apple Raisin Compote

Directions

  1. Core and dice apples.
  2. Heat butter in pan,medium heat.
  3. Pour Calvados in to small pot with raisins. Simmer on low heat.
  4. Once butter is melted and sizzling add apples.
  5. Add sugar on top and toss.
  6. Sautee until golden brown.
  7. Add Calvados and butter to apples.
  8. Continue to sautee until partially soft.
  9. Add cinnamon and salt and pepper.
  10. Transfer pot and cover for 5 minutes on low heat.
  11. Remove lid and let simmer for another 15 minutes.
  12. Done!
