So easy here is a recipe for Golden beet Salad. You can sub in red beets as well, but I love these better for this recipe. Who doesn’t love a quick side dish? Or if you are in the mood make it a main. Aside from being very nutritious, it tastes amazing! Hope you enjoy.
Quick and Easy Golden Beet Salad
Ingredients
- 3 medium beets.
- Arugula and baby spinach.
- Basil chiffonade. (sliced)
- Two shallots, sliced.
- Walnuts ( as much or as little as you want)
- 8 dried apricots sliced.
- 30 gr. herb goat cheese.
- 1 granny smith apple, sliced.
- avocado oil.
- Balsamic reduction.
- Dressing of your choice. ( I prefer a simple vinaigrette )
- Salt and pepper.
Quick and Easy Golden Beet Salad
- Heat oven to 400 F. (204 C.)
- Wrap beets well rubbed with avocado oil in tin foil and place in oven for approx. 40 min. or internal temp.of 210 F. (100 C.)
- Soak shallots in cold water.
- Let beets cool peel and slice. (pls. see video)
- Mix greens in bowl with dressing.
- Place sliced beets over greens.
- Place apple slices on the ends.
- Place shallots above the beets on the greens
- Layer goat cheese in between in a row.
- Place apricot slices on the top.
- Place walnuts on top.
- Apply balsamic in a line over the goat cheese.
- Top with basil.
- Salt and pepper.
- Serve.
