I have always had a passion for food. Tasting, eating, making it, you name it … if it could go in my mouth (even if it shouldn’t!), I was interested in it. I made my first “meal” when I was 6 years old. My Dad had gone off to take his ritual Saturday afternoon nap and I thought I would surprise him by making and having dinner ready for us when he woke up. How hard could it be? Well let us just say it wasn’t a 5 star meal. When he woke up to the smell of smoke he came running into the kitchen. His expression went from one of fear to that of puzzlement and then morphed into a grin. On the plates were two blackened pieces of what was once a protein (steak), a yellowish mush, whole burnt mushrooms, accompanied by lumps of starch (potatoes). He ate the whole thing! The rest, as they say, is history.
When I was old enough I went to work as a waiter at a Cowboy bar in Calgary and then at a Steakhouse. My next move was to the Four Seasons Hotel. I started as a Cocktail Server in the Main dining room and after several months graduated to food server. Eventually I got the opportunity to go work in the Kitchen as an apprentice. The Executive Chef was not very happy with having to take in a greenhorn. I survived the experience with just enough knowledge to understand how much more there was to learn.
Since then I traveled to Europe and back and have owned a restaurant in Mexico. I have seen many websites and youtube channels lately, some are excellent and others not so much. Most have one thing in common. They show you what the ingredients are and how to put it together but most don’t show the details in the actual recipe. There seems to be an assumed knowledge. My site is designed to show you via written recipe all the little details that seem to get lost in translation as well as video to help you along. (I will be adding the videos as time permits.)
My kitchen is small and limited in equipment. The idea is to show how anyone, and I mean anyone, can make outstanding food in just about any environment. You don’t need a 6 burner gas stove, endless counter space, and a multitude of gadgets. All you need is to be organized and know basic cooking skills to produce food that will be the envy of your guests. Each week I will be adding to my library of recipes that I hope you will find tasty and enjoyable to prepare. Cooking at home should be fun, relaxing and provide you with a sense of comfort to share with friends and family. I hope this site creates a place where you can come to de-stress, learn and have fun!
