Here is an easy and quick dinner not to mention very healthy! For those that are on a carbohydrate restricted diet this is near perfect.
Ingredients for Low Carb Steak Salad ( for 2 )
- One Rib Eye Steak
- 2 hard boiled eggs
- 1 Avocado
- 2 small Tomatoes
- Baby Kale
- Balsamic reduction
- Dried Cranberries
- Roasted Sunflower seeds
- Low carb dressing of your choice.
- Salt and Pepper to taste
Preparation for Low Carb Steak Salad
Difficulty: super easy Time: 20 minutes Portion: 2 ppl
To start you can either cook your steak on the BBQ or if you like simply place in the middle rack in your oven at 350 F. ( 175 C.) for 12 minutes. Then transfer to a hot pan to sear for 3 minutes on high for both side. ( Medium rare as in picture. ) Let rest for at least 10 minutes. Then slice the steak for plating.
Then simply assemble the salad starting with the baby kale tossed in your favorite dressing. Then arrange the other items around the kale and drizzle the balsamic reduction over the tomatoes as seen in the picture above. Viola!
