A sauce makes the plate! In many restaurants the Saucier is probably one of the most valued members of the team. You can turn a mediocre dish into something that transformed into an exquisite dish. This sauce is a classic and you can use this with pork, chicken or even steak. If you are a vegetarian, simply add this to your rice or potatoes along with some vegetables. Hope you like this as much as I do.
Easy Creamy Mushroom Sauce
Ingredients
- Avocado oil
- 550 gr.Mushrooms (Crimini)
- 100 gr. Shallots
- 30 gr. corn starch
- 6 gr. Fresh thyme
- 6 gr. Fresh rosmary
- 45 gr. butter salted
- 20 gr. crushed fresh garlic
- 300 ml. red wine
- 300 ml. beef stock
- 6 gr. black pepper
- 20 gr. sea salt ( I used Black truffle sea salt)
- 30 ml. Marsala sherry

Directions
- Heat deep sided pan with oil. (medium heat)
- Heat wine in separate small pot and reduce by half
- Add shallots and slightly caramelize
- Add mushrooms and simmer until all the water is gone
- Add salt to assist in drawing out the moister
- Add thyme, rosemary, pepper and garlic and mix
- Add wine reduction.Let simmer for 2 minutes on medium heat.
- Add Marsala or and dry sherry
- Add beef stock and simmer 2 minutes
- Add cream
- Add butter and mix well immediately until emulsified
- Using cold water mix the corn starch into a small bowl. (pls.see video)
- Once the sauce is simmering, slowly add a little at first (two spoonfuls). Mix vigorously. Once you see how it thickens you can see the consistency. If you want it thicker, add a bit more until you get th desired thickness. (be careful!) If it goes too far, add water.
- Put in on the plate! Hope you enjoy.
