Fish Stew Express

Here is a recipe that is quick and tasty. Some time ago I made A Bouillabaisse recipe and it was received quite well. However, it is a bit of a commitment. This recipe is not only fast but very tasty. Most of the ingredients are already in your kitchen with a few exceptions. Saffron is one of them but pretty easy to find as well as the fish stock. I go to my market for both. Please remember to add the fish last. Otherwise it will be tough. Also would add Pernod and use raw prawns instead. Hope you like it!

Ingredients

  • Avocado oil
  • 1 onion chopped
  • 3 cloves minced garlic
  • 1 tsp smoked paprika
  • 1/2 tsp chipotle powder
  • 1 tsp dried thyme
  • 1/4 cup dry white wine
  • 425 gr. diced canned tomatoes
  • 1 cup fish broth
  • 2 gr. saffron
  • 400 gr. cod fillets
  • 12 raw prawns
  • 12 mussels
  • 2 tbls. chopped parsley
  • salt and pepper

Directions

  1. Heat pot with oil. (medium heat)
  2. Add onions and cook until translucent.
  3. Add 2 pinches of salt.
  4. Add garlic, mix well.
  5. Add chipotle and paprika and mix well for a minute.
  6. Add 2 pinches of pepper.
  7. Add white wine
  8. Add tomatoes mix well.
  9. Add fish stock.
  10. Add saffron.
  11. Check for salt and pepper and add accordingly.
  12. Let simmer for 30 minutes covered.
  13. Add cut portioned cod, and raw prawns.
  14. Wait 3 minutes then add mussels and cover for 5 minutes.
  15. Check mussels have opened.
  16. Serve!
