As a Dane we love Mackerel. Smoked is even better. When you combine this with melted cheese, well it is a beautiful marriage. This fish is oily and full of flavour. I get my smoked mackerel from my local fishmonger but if you can’t get it there then canned in oil or water will suffice. I add liquid smoke to the mayo to compensate for the real smoked product. Remember that you only need a few drops. The ingredients and prep are super easy. Much like a tuna melt but way richer. Ingredients for Kimbo’s Peppered Smoked Mackerel Melt.
Ingredients
- 2 Slices of slightly toasted bread. My preference is Brioche.
- 2 small fillets of peppered smoked mackerel. If you can’t get it from your fishmonger then a tin in oil or water is fine. Just add a few drops of liquid smoke into the mayo. (Great cheat)
- 1 ripe avocado mushed up.
- 2 stalks celery medium chopped.
- 6 tbsp (90 gr.) mayo.
- 2 tbsp (30 gr.) each aged Provolone, Gruyere, White aged Cheddar and Mozzarella grated. You can make up your own miz as well of course.
- 2 tbsp grated parmesan.
- 2 scallions , green onion medium chopped.
- 1 tsp (5 gr.) smoked paprika.
- Salt and pepper to taste.
- 2 thin slices of tomato.
- 1 lemon
Directions for Kimbo’s Tuna Melt
Directions
- Heat oven to 375 F. ( 175C.)
- Slightly toast your bread so it doesn’t get soggy.
- In a medium size bowl break up the mackerel into small pieces.
- Cut and mix the avocado into a spread.
- Into the bowl with the Mackerel add the scallions and celery.
- Then add the smoked paprika and salt and pepper.
- Squeeze in a tsp of lemon juice. Mix well.
- Add in Mayo (or Smoked Mayo) and let stand in fridge for 30 minutes.
- Pull mix from fridge.
- Spread avocado on top of bread then apply the mix on top.
- Then add the cheese liberally on top then finish with Parmesan.
- Place on preheated grilled rack and tray and place middle rack for 10 to 12 minutes or until golden brown.
- Place one slice of cold tomato slice , fresh cracked pepper and you are done!
