Quick and Easy Golden Beet Salad

So easy here is a recipe for Golden beet Salad. You can sub in red beets as well, but I love these better for this recipe. Who doesn’t love a quick side dish? Or if you are in the mood make it a main. Aside from being very nutritious, it tastes amazing! Hope you enjoy.

Quick and Easy Golden Beet Salad

Ingredients

  • 3 medium beets.
  • Arugula and baby spinach.
  • Basil chiffonade. (sliced)
  • Two shallots, sliced.
  • Walnuts ( as much or as little as you want)
  • 8 dried apricots sliced.
  • 30 gr. herb goat cheese.
  • 1 granny smith apple, sliced.
  • avocado oil.
  • Balsamic reduction.
  • Dressing of your choice. ( I prefer a simple vinaigrette )
  • Salt and pepper.


Quick and Easy Golden Beet Salad

  1. Heat oven to 400 F. (204 C.)
  2. Wrap beets well rubbed with avocado oil in tin foil and place in oven for approx. 40 min. or internal temp.of 210 F. (100 C.)
  3. Soak shallots in cold water.
  4. Let beets cool peel and slice. (pls. see video)
  5. Mix greens in bowl with dressing.
  6. Place sliced beets over greens.
  7. Place apple slices on the ends.
  8. Place shallots above the beets on the greens
  9. Layer goat cheese in between in a row.
  10. Place apricot slices on the top.
  11. Place walnuts on top.
  12. Apply balsamic in a line over the goat cheese.
  13. Top with basil.
  14. Salt and pepper.
  15. Serve.
