This dish is so hearty, healthy and great side to so many other dishes. Packed with nutrients this is great all on its own as well. Personally I prefer the green lentils for their firmness but others will do as well. I have made this with chicken stock and bacon but for those of you that prefer vegetarian, simply hold the bacon and use vegetable stock instead. For my purposes I have made this as bed to support my reverse sear Wild Boar chops. Along with my Apple Raisin compote makes for a delicious hearty meal. Super easy to make and impress your guests. Ingredients for: Simple Braised Lentils with Vegetables
Ingredients
- 1 cup dried green lentils (wash well)
- 1 onion
- 2 stalks celery
- 2 medium carrot
- 1 large leek
- 2 bay leaves
- 1/4 cup dry white wine
- three slices bacon (optional)
- 3 cloves garlic
- 1 cup chicken stock (or vegetable stock)
- 4 tbsp sour cream
- 1/4 cup parsley
- 2 tbsp butter
- avocado oil ( or vegetable oil)
- salt and pepper

Directions
- Pre cook lentils – Cover lentils with COLD water to about 2 centimeters above the lentils. Simmer uncovered until most of the water has evaporated. About 20 minutes. Season with salt and pepper. Drain reaming water.
- Heat oil in large pan on medium heat. Cut add cut bacon and fry until soft crisp.
- Add chopped carrots, leeks, and garlic and sweat for a few minutes.
- Deglaze pan with the wine.
- Add stock and lentils bring to a simmer and reduce.
- When it has thickened into a light sauce like consistency add butter, parsley and sour cream.
- Season to taste. Done!
