Singapore Style Noodles

One of my favourite Asian recipes. Ironically it actually isn’t even from Singapore but I am told it has its origins in Hong Kong. Either way it is delicious. There are many different versions and mine is but one of them. Feel free to either add or switch out various proteins. ( Chicken, Beef, Pork, Fish, etc.) The thing that I like about it the most is that you don’t even need a wok to make it if you use my method. This recipe my seem difficult at first glance but it is really about prep. Once you get all the ingredients together and prepped it actually comes together quite fast as you shall see in the video. Ingredients

  • 200 grams ( ) shrimp
  • Avocado oil ( vegetable oil is fine as well )
  • 13 ml ( 2.5 tsp ) Asian fish sauce
  • 200 gr ( 7 oz ) rice stick
  • 3 large cloves garlic,minced
  • 5ml (1 tsp.) soy sauce
  • 5ml (1 tsp.) Shaoxing wine
  • 2 ml (1/2 tsp) white pepper
  • 2 ml (1/2 tsp) sugar
  • 3 eggs beaten with a pinch of salt
  • 200 gr. (7 oz) chinese bbq pork
  • 200 gr. (7 oz) shrimp ( preferably hand peeled
  • 1/2 small onion thinly sliced
  • 1/2 medium red bell pepper julienned
  • 15 ml (1 tbsp) mild curry powder
  • 5ml (1 tsp) tumeric
  • 8 snow peas julienned
  • 1/2 carrot julienned
  • Kosher salt
  • 3 scallions cut on a bias


Directions

  1. Wash and pat dry shrimp
  2. Place rice noodles in pot and add hot water. Stir with a chopstick to loosen. (or fork) Let stand for several minutes until they are soft but not cooked through. Drain and cover.
  3. Cut and prep all ingredients so they are ready to use.
  4. Place wine, sugar, soy and fish sauce in small bowl and set aside.
  5. Place curry, tumeric and white pepper in small bowl.
  6. Quick scramble eggs (very soft) in a non stick pan. Break into small pieces.
  7. Wipe pan and add a little oil. Once hot, add scallions. Sautee for just a minute.
  8. Then add carrots, sliced onions and then add the peas and red peppers.
  9. Add soy mixture next. Let simmer and then add garlic. Let simmer for a minute more.
  10. Add the curry mix and stir well. 30 seconds.
  11. Add Shrimp and pork. Stir well until just warmed.
  12. Lay noodles over top of pan mixture. Let warm. Then using chopsticks start to fold all ingredients together.
  13. Once it well mixed add eggs and scallions, mix and plate immediately.
